To prepare: Heat 2 tbsp of cooking oil on medium heat, stir in the contents of curry paste and herb pouches and sauté for 1 minute. Add 2 to 3 cups of veggies and protein of your choice then sauté for 5 minutes. Add 400 mL of coconut milk, ½ cup of water and let simmer for 10 minutes or until well cooked. Season to taste and enjoy over rice and garnish with lime and fresh cilantro.
